Coconut flour ciabatta buns

One of the things I miss the most after changing my diet is a saturday morning with my family and moms homemade buns. I've been looking after a white bread replacement recipe for a while now and found this on Petite Kitchen. It's made on coconut flour - it's easy - and tastes amazing!


INGREDIENTS
4 tbsp coconut flour
3 tbsk husk psyllium
1 tsp baking soda
1½ tbsp apple cider vinegar
4 eggwhites
just under ½ cup boiling water

PROCEDURE
Preheat oven to 160C and grease a baking tray with coconut oil. Add dry ingredients to a large bowl. Mix well. Add the egg whites and apple cider vinegar and mix until a thick dough forms. Add the boiling water (might seem wet at first but the coconut flour will soak up all of the moisture. Form into 6-8 buns and bake for 25-30 minutes.
