Coconut bread - only 3 ingredients

I found this recipe earlier on Petite-Kitchen and it did sound a bit weird that a bread could be made on only 3 ingredients but it looked so good, so of course I had to try! This bread only takes a couple of minutes to prepare. 

6 eggs
3 cups of dessicated coconut
1 tsp baking soda

Preheat the oven to 140°C, and line a loaf tin with baking paper. Add the eggs, coconut and baking soda to a food processor. Blend until combined, then pour in to the prepared loaf tin. Bake for 45 minutes, or until a skewer comes out clean when inserted. Leave to cool, then simply lift out, and slice thickly. Will keep for 3-4 days in an airtight container.
