Chocolate chip cookie dough cake

Lately I've been finding a lot of cake/cookie recipes using chickpeas, and after making the black bean brownies I was not in doubt that it would taste delicious. I found this recipe on here! Amazing blog. 



INGREDIENTS
2 cans of chickpeas - cooked, drained and rinsed
2,4 dl oats
4 tbsp unsweetened applesauce
3 tbsp coconut oil
2 tsp vanilla powder
2 tsp baking powder
1 tsp baking soda
1,5 cup stevia
100g chopped dark chocolate (85%)

PROCEDURE
Mix all ingredients except chocolate in a food processor. Mix in the chocolate (they are not going to be processed!) and pour the batter into a cake tin. (Use a baking sheet or coconut oil). Bake it in the oven for 30-40 minutes on 175C. Let it cool - Enjoy!

No bake chocolate protein cake

Here's another recipe recreation from Protein-opskrifter. That dude got some serious baking skills. This cake is perfect chopped in a bowl with an apple and sprinkled with cinnamon (just saying!) - as a late night snack.



INGREDIENTS
170g avocado
35g cacao powder
15g fiber husk
55g chocolate casein protein powder (Whey protein wont work!)
40g erythritol
15g coconut flour (Superfruit)
165g coconut milk (light version)
100g greek yoghurt

PROCEDURE
Mash the avocado in a bowl - combine casein, erythritol and coconut flour. Add the wet ingredients and mix well. Pour the mass in a cake tin with a sheet. Put the cake in the fridge for a couple of hours - enjoy!

Crispy chocolate chip cookies

Lately I've been trying really hard to find a recipe for cookies that are actually crispy. I've also been experimenting with a lot of different ingredients but failed everytime. They just wont! And what is great about a cookie that isn't crispy? Nothing. But while looking around on instagram I found this girl Cecilie Lind who makes a lot of lovely protein packed yummy stuff. She had a recipe for a crispy cookie and instead of using almonds I used 85% dark chocolate to give them the "chocolate chip cookie" taste. Sure worked!


INGREDIENTS
50g vanilla whey protein (I use this one)
100g oatflour
40g dessicated coconut
40g coconut oil (melted)
40g unsweetened applesauce
30g unsweetened 85% dark chocolate

PROCEDURE
Preheat oven to 200C
Cut the chocolate into small piece and combine all ingredients in a bowl. It might seem like the dough wont stick together but when you start to form into cookies it will. The easiest is to start making them round and then press flat. Bake in oven for 8-10 minutes.

Chicken, arugula, cottage cheese pizza

This is just beyond amazing. Can you really eat pizza while living on a clean diet? Answer is yes! This pizza crust is made from the ciabatta bun recipe I posted a few days ago, just instead of making buns - I formed a pizza crust. This was SO tasty and more "human sized" than normal pizzas where you get one bigger than a plate and feel like you are going to explode when you are done. Try this out!



INGREDIENTS
Crust: 4 tbsp coconut flour
3 tbsk husk psyllium
1 tsp baking soda
1½ tbsp apple cider vinegar
4 eggwhites
just under ½ cup boiling water

Topping: 150g chickenbreast (without skin)
40g arugula
Tomatopaste (just to cover the surface)
80g lowfat cottage cheese
Oregano

PROCEDURE
Preheat oven to 225C
Add dry ingredients to a large bowl. Mix well. Add the egg whites and apple cider vinegar and mix until a thick dough forms. Add the boiling water (might seem wet at first but the coconut flour will soak up all of the moisture. On a baking pan with baking sheet, split dough in two (I weighted mine so they were the same weight) and form them round and flat by using a rolling pin. You choose how thick you like the pizza, but remember they will rise slightly in the oven. Add the tomato paste to both surfaces of the pizza and oregano. Set aside. Cut the chicken into small pieces and fry them in olive oil until they are well done but not too brown. Put 75g on each pizza. Now put in oven and bake for 10 minutes. When out of oven, add arugula and cottage cheese. Of course you can use the topping you want but remember the nutrition facts will change and this is by the way an amazing combo of food. Enjoy! 

If you only want 1 pizza just cut all ingredients in half (But always nice to get pizza two days in a row right!)

Clean apple crumble cake



INGREDIENTS
5 apples
1,5 large tbsp cinnamon
4 tbsp stevia
70g oatflour
50g vanilla whey protein
2,5 tbsp melted coconut oil
½ tsp vanilla extract
50g chopped almonds

PROCEDURE
Preheat oven to 200C
Apples: Chop the apples into small squares and put in a baking pan. Mix cinnamon with stevia and pour over apples.

Crumble: Mix all ingredients and stir until it's a crumble dough. Pour over the apples and bake for 25-30 minutes.

NUTRITION pr serving. (6 servings - could be 8 if you wanna eat less)

Blueberry zucchini flatbread

This bread were actually supposed to rise while in the oven. And that didn't happen! Though it turned out amazingly great and it's definitly not the last time I make this.

INGREDIENTS
1+1/4 cup oats
40g vanilla whey protein powder
1 tsp baking soda
1 tsp cinnamon
4 eggwhites
1/3 cup almond milk
1/3 cup finely shredded zucchini
1/4 cup blueberries
PROCEDURE
Make half of the oats into flour using a foodprocessor. Mix all ingredients. Pour in a loaf tray with baking paper under. Bake on 175C for 25-30 minutes.

Coconut flour ciabatta buns

One of the things I miss the most after changing my diet is a saturday morning with my family and moms homemade buns. I've been looking after a white bread replacement recipe for a while now and found this on Petite Kitchen. It's made on coconut flour - it's easy - and tastes amazing!


INGREDIENTS
4 tbsp coconut flour
3 tbsk husk psyllium
1 tsp baking soda
1½ tbsp apple cider vinegar
4 eggwhites
just under ½ cup boiling water

PROCEDURE
Preheat oven to 160C and grease a baking tray with coconut oil. Add dry ingredients to a large bowl. Mix well. Add the egg whites and apple cider vinegar and mix until a thick dough forms. Add the boiling water (might seem wet at first but the coconut flour will soak up all of the moisture. Form into 6-8 buns and bake for 25-30 minutes.

Homemade strawberry jam

One of the things I miss the most is since changing my diet is to enjoy one of moms homebaked buns with some jam! Though most jams are full of sugar and other additives so I figured - why not just make my own?


INGREDIENTS
500g strawberries
1 tbsp lemon juice (just squeeze from a lemon)
2 tbsp stevia

PROCEDURE
Chop the strawberries and mix all ingredients in a pot over medium heat. Stir a lot for around 10 minutes, then mash the strawberries with a fork while letting it cook. Let it cook for around 40 minutes until it's thick. Let it cool and transfer to a jar.

Coconut/vanilla proteinbar


INGREDIENTS 
60g vanilla whey proteinpowder
35g dessicated coconut
25g blended almonds
65ml coconut milk (light)
20g dark chocolate (85%)

PROCEDURE 
Fry the dessicated coconut until it gets a light brown color. Mix the dry ingredients with the coconut milk. Form 3 bars and pour the amelted chocolate on them. You can melt the chocolate in the microwave. Put in the freezer for 30 minutes until dry and transfer to the fridge. These are absolutely amazing! Best post-workout snack.

Tuna spinach salad

So lately I've been so busy trying out dessert/snack recipes that I kind of forgot to makes some yummy dinners. I really really love homemade tunasalad so without any recipe I tried to make a healthy one myself. Turned out prettyyyyyyyyyy awesome.


INGREDIENTS 
1 can tuna in water - drained
70g low fat greek yoghurt35g pickles
Salt/pepper to taste
Spinach - just how much you'd like
50g corn
30g onion
5g chives
50g red bell pepper

PROCEDURE 
Drain the tuna can and mix it with the greek yoghurt. Chop the veggies and mix it all together, voila! I added some chia and pumpkin seeds on top.

Black bean fugde

This is by far the most AMAZING thing I've ever made. I found this lovely black bean fugde recipe on Petite-Kitchen and after having success with the coconut bread from her as well I figured - why not try this one. I've already made brownies with black beans before so I knew they work well with chocolate, but THIS fugde is over my imagination. There's no way you can taste that this isn't unhealthy.


INGREDIENTS 
1 can of black beans - drained and rinsed
4 tbsp honey
4 tbsp good quality cocoa
6 tbsp coconut oil
1 tsp vanilla extract 

PROCEDURE 
"Line a small square or rectangle tray with baking paper. I used a small kids shoe box, as I did not have a tray small enough. A tupperware container could work also. Place all ingredients in to a food processer and blend until completely smooth. Spoon in to the prepared tray or container. Place a piece of baking paper on top of the mixture. Press down until evenly smoothed out. Place in the freezer for 1-2 hours to set. Remove from the freezer and transfer to a chopping board. Carefully peel off the baking paper, then cut in to bite size pieces." - Petite Kitchen

Coconut bread - only 3 ingredients

I found this recipe earlier on Petite-Kitchen and it did sound a bit weird that a bread could be made on only 3 ingredients but it looked so good, so of course I had to try! This bread only takes a couple of minutes to prepare. 


INGREDIENTS 
6 eggs
3 cups of dessicated coconut
1 tsp baking soda

PROCEDURE 
Preheat the oven to 140°C, and line a loaf tin with baking paper. Add the eggs, coconut and baking soda to a food processor. Blend until combined, then pour in to the prepared loaf tin. Bake for 45 minutes, or until a skewer comes out clean when inserted. Leave to cool, then simply lift out, and slice thickly. Will keep for 3-4 days in an airtight container.

Low carb cauliflower bread


INGREDIENTS 
1 cauliflower (Mine was around 500g)
2 eggs
30g linseed
15g sesame seeds
30g oatflour
Pinch of salt
Some oregano or some other spices you might enjoy
Pumpkin seeds (topping)

PROCEDURE 
Put the cauliflower in a food processor and process for a few minutes. Combine in a bowl with other ingredients. Mix in the 2 eggs. Form it on a baking sheet (i  made 6) and add the pumpkin seeds on top. You can use other seeds such as sunflower or poppy seeds.

Raw cookie dough balls

This is the most yummy thing I've ever tasted. Cookie dough is not such a common thing in Denmark but I had try this out when I saw the recipe. It's easy, no baking, and will satisfy your sweet tooth 100%!

INGREDIENTS 
1 cup cashews
 1 cup oat flour
1½ tbsp honey
1 tbsp peanutbutter (I use an organic one)
1 tsp vanilla powder
 Dried cranberries - as many as you like. Dark chocolate chips are used in original recipe but I actually prefered with cranberries (Love them!)

PROCEDURE 
Combine cashews and oats in food processor and process until they reach a flour consistensy. Add remaining ingredients - process for a few minutes until it reaches a dough'ish consistensy. It doesn't really look like it can be made into balls but don't worry, when you press it, it will be easy! Mix in the cranberries into the dough and form it into inched-sized balls. I would recommend to put them in the fridge until they are cold but you can eat them immediately too!

Blueberry yogurt cookies


INGREDIENTS 
1/3 cup stevia
 ¾ cup greek yogurt 
2 Tbsp egg whites 
½ tsp vanilla 
1 cup oat flour 
1 tsp baking powder 
½ tsp salt 
¾ cup blueberries  

PROCEDURE 
Preheat oven to 375F (190 celcius) Combine stevia, yogurt, egg whites and vanilla. Set aside. Combine dry ingredients. Mix dry ingredients into wet ingredients. Stir in blueberries. Drop Tablespoons of batter onto a baking sheet lined with foil and sprayed. Bake for 8-10 minutes.

Black bean brownies

This is so far the most yummy and lovely cake I've ever made and most healthy one too! This recipe is from http://instagram.com/mindovermunch who makes a lot of delicious food and is a great source for inspiration for people who wants to live a healthy lifestyle. Check her out! Well this brownie cake is made of black beans and yes it does sound a bit weird (gross for some people, maybe?) but I promise, you can't taste it and it makes the cake really moist!
(The white stuff on the cake is actually because they are frozen. YES YOU CAN FREEZE! So make a bunch!)

INGREDIENTS
1 can black beans, drained and rinsed 
2 eggs 
2 Tbsp egg whites 
1 Tbsp coconut oil 
2 Tbsp almond butter 
1/2 cup cocoa 
1/4 tsp salt 
1 tsp vanilla 
2/3 cup stevia/Splenda 
1 /2 tsp instant coffee 

PROCEDURE 
Preheat oven to 350F (175 celcius) 
Combine all ingredients in food processor. 
Pour batter into baking dish sprayed with cooking spray
Bake 12-15 minutes (Mine had 13 minutes)
